Patrick is an amazing artists and his chocolates are little pieces of art themselves. I remember years ago in France, he made a life-sized elephant out of chocolate. For his chocolate bonbons, it’s the ganaches filled inside that really strike me – they’re vivid and bright in taste and flavor, and you know exactly what the flavor is the moment you bite into it, without even having to look at the box.
