A few more days left for our Galette des Rois (French King’s Cake) here in NYC, with that creamy almond frangipane inside a flaky and golden inverse puff pastry crust. Each flaky, golden bite is filled with caramelized Honeycrisp apples, creamy vanilla riz au lait (rice pudding), and golden sultanas, which is all wrapped in a delicate laminated brioche crust. Each winter, there’s always a Mont Blanc on our menu in SoHo, named after the highest peak in the Alps. While they’re usually made with chestnut, our special Ube & Coconut version for this season is made with ube (purple yam) ganache, coconut Chantilly, and a center of strawberry guava jam set atop sablé Breton, with a snow flurry of shredded coconut on top to finish.
