Best described as a "caramelized croissant", the DKA (short for "Dominique's Kouign Amann") is a Breton pastry that features a crispy, caramelized outer shell with a flaky and tender crumb. While the traditional kouign amann usually come in a large form, in Chef Dominique's version, he molds each in individual servings and has reduced the amount of butter and sugar to create a lighter and less dense texture.
