What is the Cronut™ pastry?
The Cronut™ is the unique pastry creation by Chef Dominique Ansel that many have described to be a croissant-doughnut hybrid. After its launch on May 10, 2013, Cronut™ fans spanned the world from Berlin to Singapore, making it the most virally talked about dessert item in history.
To this date, Dominique Ansel Bakery in New York is the only place that sells the Cronut™, a specific product that is not to be confused with just any other croissant-doughnut hybrid. The Cronut™ brand and product is a registered trademark of Dominique Ansel Bakery both in the US and internationally. Please beware of imitation items claiming affiliation with the bakery.
The Makings of the Cronut™…
Taking 2 months and more than 10 recipes, Chef Dominique Ansel’s creation is not to be mistaken as simply croissant dough that has been fried. Made with a laminated dough which has been likened to a croissant (but uses a proprietary recipe), the Cronut™ is first proofed and then fried in grapeseed oil at a specific temperature. Once cooked, each Cronut™ is flavored in three ways: 1. rolled in sugar; 2. filled with cream; and 3. topped with glaze. Cronuts™ are made fresh daily, and completely done in house. The entire process takes up to 3 days.
There is only one flavor of Cronut™ every month. Here are the flavors we’ve had: May – Rose Vanilla; June – Lemon Maple; July - Blackberry Lime; August – Coconut; September - Fig Mascarpone; October- Apple Creme Fraiche; November – Salted Dulce de Leche; December -Valrhona Chocolate Champagne; January – Peanut Butter Rum Caramel; February – Raspberry Lychee; March – Milk & Honey (with hint of lavender); April – Passion Fruit Caramelia. For May, it is Blueberry Lemon Verbena with Greek Yogurt Ganache (and lemon verbena sugar).
Please eat Cronuts™ immediately as they have a short shelf life. And if you do cut, please use a serrated knife, so as not to crush the layers. Never refrigerate these treats as the humidity from the refrigerator will cause them to go stale and soggy. Since Cronuts™ are filled with cream, we do not recommend serving them warm or hot.
How to Order the Cronut™?
Each Cronut™ retails for $5.00 (pre-tax), and there are three ways to score yourself one. At the moment we do not accept orders online or by email, but are working on a way to do so soon.
1. Visit Us at the Bakery
Every day we offer fresh made Cronuts™ at the bakery. The lines start outside as early as 1 hour prior to opening (we open at 8am from Mon-Sat and 9am on Sun). Please note that we are not officially opened until our hours of operation and cannot service the line that starts earlier. As a rule of thumb, if you arrive prior to 7:00am on a week day, you have a great chance of getting a Cronut™. (Weekends tend to be busier.) Please note there is a 2 person limit for in-store purchases. When in line, please do be considerate of the residences in the neighborhood and the others in line. Do not cut or reserve spots for friends and we hope you don’t endorse any scalpers you may see. Please do try to keep the sidewalk clear of obstruction so there is ample room for passersby and keep your voice level to a minimum.
2. Get on the Pre-order List
Every Monday at 11am, we offer preorders ONLINE at www.cronutpreorder.com (Beta). After March 3rd, we will no longer be offering pre-orders by phone. Please keep in mind we are taking pre-orders for up to two weeks in advance. (For Monday, April 21st, we open up orders for the week of May 5th thru May 11th). Currently pre-order lists are full up until May 4th. The limit per person for pre-orders is 6 Cronuts™. Pre-order lists fill up very quickly, and we recommend this only as a last option. We can only take one pre-order per person. (Our online system is currently in beta testing and we experience a large amount of traffic so it may be timed out because of the inflow of customers. This is not because the website is broken. It is merely stalled because of the large traffic volume. Thank you for bearing with us!)
3. Place a large order (over 50)
Please email the shop at firstname.lastname@example.org. We would need a minimum of one (1) month’s advance notice. Currently, the list for large orders is full up through the month of April. Please email on May1st for orders of June 1st to June 30th (email early as many orders come in at 12 midnight). Orders will confirmed based on a first-come-first-serve basis in the email list. Please include in your email: 1. preferred date/time of pick up; 2. number of Cronuts™, and 3. a phone number so we can reach you to confirm the order and receive credit card information. Our staff will try to contact each customer by phone at the number provided for TWO attempts within 3 hours before moving on to the next order, and the spot is forfeited. In order to be fair to the large demand, we can only take one large order a month from each individual. Please expect to hear from us within 72 hours.
We are increasing our production of our Cronut™ pastry more each day! Currently, we make approximately 350 Cronuts™ minimum, exclusively for the line daily at our bakery. Look for us nationwide as well, but please be wary that if you don’t see the Dominique Ansel Bakery affiliation, it is not a Cronut™.
